10 Delicious Leftover Recipes to Combat Food Waste and Save Money

Food waste is a significant issue that affects not only our environment but also our wallets. According to the Food and Agriculture Organization of the United Nations, one-third of all food produced globally goes to waste each year. This equates to about 1.3 billion tonnes of food being thrown away annually.

One way we can combat this problem is by finding creative ways to use leftovers in our meals rather than throwing them out. Not only does this reduce food waste, but it can also save us money and time spent on grocery shopping and cooking.

Here are some delicious leftover recipes that you can try at home:

1. Fried Rice

Fried rice is an excellent dish for using up leftover rice and vegetables in your fridge. All you need is some soy sauce, oil, cooked rice, eggs, garlic, onions, and any vegetables you have on hand (such as peas or carrots). Cook the vegetables first with garlic and onions before adding in the rice and eggs. Drizzle with soy sauce for extra flavor.

2. Soup

Soup is a versatile dish that can be made from almost any ingredient you have lying around in your kitchen – whether it’s meat or vegetable-based stock! Simply add chopped vegetables such as celery and carrots into a pot with your chosen protein source (e.g., chicken or beef) along with some spices such as thyme or rosemary if desired.

3. Quesadillas

Quesadillas are easy to make using leftover meat such as roasted chicken or beef along with cheese and tortilla wraps. Simply place the ingredients onto half of the tortilla wrap before folding over then frying on both sides until crispy!

4. Shepherd’s Pie

Shepherd’s pie is another classic recipe that allows you to use up leftover meats such as lamb or beef combined with potatoes which may be growing sprouts otherwise! First cook down any veggies like onion & mushrooms while mashing boiled potatoes together till they’re creamy. Then mix the mashed potatoes with the meat mixture before baking in an oven dish.

5. Omelet

Omelets are a great way to use up leftover vegetables and meats while also providing you with a high protein breakfast option. Simply beat eggs together, then add any chopped ingredients into the mix before cooking in a pan or griddle.

6. Stuffed Peppers

Stuffed peppers can be made using leftover rice, meat or quinoa along with some chopped vegetables such as bell peppers and onions. Mix everything together and spoon it into hollowed-out bell peppers before baking them until golden brown!

7. Stir Fry

Stir fry is another easy meal that can be made from leftovers such as cooked rice, chicken or beef combined with fresh vegetables like broccoli, carrots & snow peas for instance! Simply heat up some oil then toss everything together until heated through.

8. Casserole

Casseroles are perfect for combining different types of leftovers into one delicious dish! Just chop up whatever veggies & meats you have on hand – layering them within a casserole dish alongside your favorite sauce (tomato-based sauces work well) and baked in an oven till bubbly!

9. Frittata

Frittatas are similar to omelets but take things further by adding more cheese & greens along with leftover veggies/meat for extra flavor! Start by beating eggs together then pouring overtop of cooked ingredients inside a skillet which is later baked at 350°F until set.

10. Pizza

Pizza toppings don’t need to be limited to just pepperoni or sausage – they can include anything you want! Combine leftover ingredients like roasted veggies & meats onto pre-bought pizza crusts, top off with cheese and bake in an oven till crispy!!
