– Salt & Pepper
– Olive Oil
– Butter
– Fresh Parsley Leaves

1.Remove the small side muscle from each scallop; rinse with cold water and pat dry.
2. Season both sides of the scallops generously with salt and pepper.
3. Heat a large skillet over high heat until hot, add 1 tablespoon olive oil.
4. Add the scallops to the pan in a single layer, making sure they’re not touching each other. Sear without moving for about 2-3 minutes on one side or until golden brown crust forms.
5. Flip scallops using tongs and add butter to skillet; continue cooking for another minute or so until cooked through (but still tender).
6.Remove pan from heat ~ sprinkle parsley leaves over top before serving.
